• Tethered means you lose jailbreak everytime you reboot your device. 
• Untethered means you jailbreak your iphone once and then it works forever.

People always tell that jailbreak is hard to understand but all this untethered and tethered stuff are done because of apple limits on Iphone and how they've secured it.
